We don't do the "return 95% of the product" thing. That's not a real guarantee, it's a refund loophole.

Here's ours: If you try Lady Fuku and you're not happy, email us. We'll refund you and you keep the matcha.

Give it to a friend, use it in a smoothie, whatever you like. We'd rather you try it and know it's not for you than never try it at all.

100% Japanese Ceremonial Matcha
Unique Nutty Taste
2-4 Hrs Calm-Steady Energy

A matcha with nutty notes you won't find in Uji matcha.First Harvest. Farm-direct from the tea fields of Yame.

Nutty. Smooth. Rich. A Unique Flavour Profile You Won't Find Elsewhere.

Grown in Yame, Fukuoka, a renowned tea region with idyllic soil and climate. The result is a flavour profile you won't get anywhere else in our range: nutty cocoa notes, a balanced bitterness, and a subtle sweetness that sits behind the stronger flavours.

The bitterness is up front and deliberate. Unharsh nor sharp. Similar to dark chocolate or black tea. It's a refreshing, uplifting bitterness.

Behind that, a light savoury (umami) quality with hints of sweetness appear when you pause to pay attention.

The balance of bitter, sweet, and savoury is what makes this matcha interesting and loveable. Each sip gives you complexity to pick apart for enjoyment.

The nutty, bitter, sweet and savouriness makes this matcha especial for lattes. There is a coco, chocolate-like depth that pairs well with milk without losing character.

Tasting notes: Nutty. Light bitterness. Subtle sweetness. Light savoury (umami). Smooth, clean finish.

Body: Light to medium — refreshing and snappy, not heavy.

Bitterness: Light and refreshing. Balanced by hints of sweet and nutty notes.

You'll love this if you:

  • Want something that tastes genuinely different from every other matcha on the market — not another variation of "smooth and umami"
  • Like dark chocolate, specialty coffee, or strong black tea — the flavour profile lands in that territory
  • Make lattes and want a cocoa-like, mocha-style matcha experience without any added flavouring
  • Already drink matcha regularly and want to expand your range with a different region and different flavour
  • Enjoy bitterness as a flavour, not to be masked or avoided

This might NOT be for you if:

FOR LATTES — Try a smaller ratio, where the cocoa notes come alive (2 minutes)

This is where Lady Fuku is most enjoyable. The milk softens the bitterness and brings the nutty cocoa flavour forward.

Step 1 — Sift. Add 3.5g into your cup.

Step 2 — Whisk. Pour 20–30ml of hot water (around 80°C). Whisk until smooth.

Step 3 — Add milk and froth. Oat milk works particularly well — it brings out the cocoa notes. Almond also pairs well. Keep the ratio balanced: 40–60ml of milk.

Optional: A small amount of sweetener rounds out the bitterness. Agave works better than sugar with this flavour profile.

Total time: 2 minutes.

FOR STRAIGHT TEA (1 minute)

This is where you taste the full complexity. The bitterness, the sweetness behind it, the nutty depth.

Step 1 — Sift 1.5g into a bowl or cup.

Step 2 — Pour 70–80ml of hot water (80°C).

Step 3 — Whisk briskly for 15–20 seconds.

The first sip is clean and bright. Then the bitterness arrives. It's smooth, not sharp. If you wait a moment, the sweetness comes through underneath.

Yame, Fukuoka. Not Uji.

Every other matcha in our range comes from Uji. Lady Fuku comes from Yame, in Fukuoka prefecture.

Yame is one of the most respected tea-growing regions in Japan, known for producing matcha with a distinctive nutty, cocoa-like character that Uji matcha doesn't have. The difference comes from the soil, climate, and growing conditions specific to the region.

Lady Fuku is a blend of two Japanese green tea varieties — Okumidori and Saemidori. First harvest, hand-picked in May. Shade-grown using a traditional covering method (called "Tana") for 20–30 days before harvest, which concentrates flavour and nutrients.

We import directly from the farmers. No blending with cheaper sources.

Harvest: First harvest, May. Hand-picked. Shade-grown 20–30 days.

Freshness: Imported monthly. Shipped from our Melbourne warehouse.

Ingredient list: 100% Japanese Green Tea Powder (Camellia sinensis).

Lady Fuku vs the Rest of the Range

Lady Fuku isn't competing with the other ceremonials on intensity or sweetness. It's the only matcha with nutty notes, in a category of its own.

The Masterpiece ($43/30g): Crisp, clean, light bitterness. Classic Uji flavour. The best all-rounder.

Emerald Emperor ($49/30g): Mellow, zero bitterness, medium savoury (umami). Smooth and gentle. Great for straight tea.

Scholar's Secret ($55/30g): Bold, strong savoury (umami), full-bodied. One of our strongest and smoothest Uji matcha in the range.

Lady Fuku ($58.50/50g): Nutty cocoa notes, balanced bitterness, subtle sweetness. Yame origin. A flavour profile none of the above can offer. Best for people who want something different.

Pinnacle Perfection ($72/30g): Naturally sweet, richest in the range. 2–3x the intensity of Scholar's Secret.

If you like dark chocolate, strong coffee, or bold tea — Lady Fuku is worth trying.

If you prefer clean sweetness and smooth umami — stay with the Uji range.

Frequently Asked Questions

All our matcha is 100% green tea. Shade grown 2 weeks+ before harvest to maximise antioxidants. Shading the tea leaf is like tough love – the extra antioxidants produced in this period makes our matcha taste really good!

Then we book her in for a "premium" spa-day where she's treated to some steaming, drying and powdering.

This softens & rounds her attitude out, where her gentle-sweetness, pleasant-bitter and crispiness starts shining.

Always keep your matcha in the fridge. Don't leave her out in the sun like a beach ball. She'll get quite cross with you. Heat of any kind drains her life.

No fridge? No worries. Store her away from direct sunlight.

Upon opening: Scribble the date of opening & put her back in the fridge after use. Unlike Elsa, do not Freeze & Thaw.

For UNOPENED matcha: it's safe to store her in Freezer for 12+ months. When you're ready, thaw her in the Fridge for 1-2 days before open.

"F#* it I'll do it myself!" - I hear you!

Here's a mini guide to put those cafes to shame:

1. Start with small ratios. Smaller ratios allow her (flavours) to POP while respectively telling the milk to stop getting in her face about how much she needs him.

Try this: 1g matcha / 10ml water / 15ml milk / 1g sugar (if you like it sweet)

2. NEVER POUR OVER.Unless you're snapping a few pics for Insta and friends, she tastes best when you:

Whisk, froth & mix the matcha with milk together

Step 1: Make matcha brew
Step 2: Add milk (and sweeteners/syrups)
Step 3: Whisk/froth again

Light-medium-full body: This is the mouthfeel of matcha tea when sipped alone.

Caution:Full-body matcha paired with cheap-weak milk makes faint or watery lattes. But a quality milk mixed with average matcha can turn 6s to 8s.

Use exceptional ingredients to get phenomenal results.

Full-body tells your senses she's got a huge ego. Her notes are typically strong, and may linger around.

Light-body is demure and subtle. It's like a vivid dream except you can't remember the details but the essence of that dream.

Sweet: Sweet only like broccoli or baby bok-choi. Matcha is not saccharine. It is a vegetal sweetness. Often subtle and faint.

Bitter: The sharp, pungent flavour like crushed Panadol or antibiotics. It's a harshness in matcha that quickly overwhelms when not used to. Bitterness combines well with milk to make lattes refreshing.

For bitter matchas, the best way to make lattes is using a cold-whisking method. Where you mix matcha and milk directly together. No water needed.

Astringent: A dryness, mouth-puckering taste. It's almost sour as if you had lemon. Highly astringent matchas can be considered "grassy" by some. But astringency goes well in lattes, making your drinks crispy.

Umami: Savouriness like un-flavoured popcorn. Umami is an amplifier of the above flavours. In a cultural sense, it's the entire experience of matcha; from the mouth-feel combined with sweet, bitter or astringent notes. Umami is used interchangeably to describe the "experience" as well as the "savoury" component of matcha.

Caution: Explaining umami is like telling the blind colour red. People will not understand you if they have not experienced it.

Matcha is seasonal! Every year, farmers plant green-tea and work year round to make sure it's well taken care off for harvest. It is grown out in the open fields where they can't control the sun, rain and wild, unpredictable weather.

In the same line of work like blueberries, oranges and apples. The farmers do 110% to ensure it's healthy and consumable. But not every batch is sweet or tender.

Step 1: Calculate your daily caffeine intake

(Example: 5 double-shot espressos = 640mg)

Step 2: Start with matcha at 50% of current caffeine intake

 (640mg × 0.5 = 320mg = 6 servings of matcha daily at 50mg each)

Note: 1 serve matcha = 1.5g (50mg caffeine)

Step 3: Taper down over 3 months

  • Month 1: 6 servings (300mg)
  • Month 2: 4 servings (200mg)
  • Month 3: 3 servings (150mg)

Step 4: Build your routine & timing

  • First matcha: 90-120 min after waking
  • Last matcha: Before 3 PM (earlier the better)
  • Take one caffeine-free day weekly

Expect: Week 1-2 withdrawal (headaches, fatigue).

Week 3+ better sleep, stable energy and steady focus.

For most healthy adults: Yes, matcha is safe when consumed in moderation (1-3 servings daily).

Please seek professional medical advice if you have health concerns.

For watery, bitter, bland or clumpy matcha: Troubleshoot with a different milk using a smaller ratio. Or follow our cold-paste method and adjust from there!

Cold-Paste Method:

1) Sift 3-4g matcha into bowl/cup

2) Add a dash of cold water (about 10ml)

3) Whisk & mix until thick and pasty

4) Add 3-6g sugar/agave to balance bitterness and astringency

5) Add 40-60ml milk to the paste

6) Whisk & froth until frothy!

For no-nonsense lattes: Sage has a bitterness and astringency that make him refreshing

For daily lattes: go Gourmet's Gold

For lattes that have "nuttier" taste: Lady Fuku is bangin'

For classic "premium" feel and taste: The Masterpieceis your friend

For strong-luxurious lattes: Emerald Emperor or Scholar's Secret

For treating yourself cos you deserve it: Pinnacle Perfection

For traditional Usucha (thin-tea) and bestflavours in latte: the chasen (bamboo whisk) is indispensable. Yes. It takes some time to get used to. When you know the ins-outs of the whisk, your matcha game improves 100x.

Electric frothers make dang good drinks too, if you are patient and precise.

For speed and convenience the electric frother is the choice for making matcha lattes on the go.

If you love slowing down, taking it all in while smelling the flowers; you'll love the bamboo whisk.

All you need is a jar, matcha, water, milk and maybe sugar with a protein shaker ball. Ice is optional, but highly recommended.

Put the A-team together and shake as hard as your body can handle.

This is easier than it looks!

How we got started
During Covid I got up to 5 coffees a day.
At wits end, I opted for matcha.
2021 Aussie matcha scene did not satisfy my taste buds; it tasted weak, bland or stale.
Ok. Fine.
So I imported a stash of matcha for personal use from a tiny Uji farm.
I made fresh matcha tea for my morning personal training clients.
Most loved it.
A few asked me where they could score their own.
1 filthy-rich client told me to go all-in.
I told Vicky. She said "say less, babe"
We came up with Green Caffeine because Brown Caffeine wasn’t gonna cut it.

Best quality matcha The kit come with three blends. All three are nice to drink. To me the best one is the early riser it’s smooth. All three blends are not bitter which is a plus. The electric whisk is good quality and quite powerful. I would buy another one if they were sold individually. I’m happy with the service as it was very quick shipping from NSW to VIC. I will be purchasing again soon for gifts.
